As you may have gathered from your research into the availability of Maxim parts, they are very hard to get sometimes. You may want to consider this when designing with their parts. Burr-Brown, National, Linear Technology, Microchip, Analog Devices, among others, also make ADCs. I would definately get at least a lead time estimate before designing with a part. A pin compatible second source or designing your board to also accept another ADC is also not a bad idea most of the time.
