Sensory's voice recognition chips, at least when I last looked at them, were *controlled* by an 8051 core, but the actual speech recognition was handled by a lot of dedicated hardware, with multiple patents covering it all.
I tried their development kit, and it just didn't work well enough for random voices, even with a limited vocabulary. You get better results if you train it to recognize a specific voice, again with limited vocabulary. To use an 8051 to transcribe a random message from a random voice...no way. Look at the voice recognition/dictating software that's available for a PC for a realistic view of what can be done today with a high-horsepower processor and lots of resources.
