"BIN" and "HEX" in themselves mean little;
"BIN" could be Intel's Object Module Format (OMF), or many others.
Intel OMF documentation can be found on the Intel site, and also www.keil.com

Similarly, "HEX" could be Intel's Hex Format, originally deigned for downloading binary files over character-based serial links to PROM programmers.
You will often find a description of Intel Hex in your PROM programmer documentation. Or, again, see the Intel site.
