Thanks Hal and Charles ,
I would like to conserve port pins and am planning on using an I2C (RTC and EEPROM) so the PCF8574 will be worth looking into. I did wonder if anyone thought my original design idea is workable though - I would like to try it as a learning experience as much as anything unless you guys rule it out as totally unworkable.
