First, you need to design the circuit - obviously, you can't develop a PCB before you know what the circuit is!

Start at the Analog Devices (AD) website - they have loads of support materials there!

As a complete novice, you should probably begin with a starter kit, or evaluation kit, or whatever AD call them.

For the standard 8051 stuff, you will need the so-called "bible" for the 8051:
