Because real signals can never change state instantaneously - it always takes a finite time for the signal to rise or fall.

However, why does the time duration always measure from the mid-point of bevel of the trapezium?

It doesn't always.

You've got to have some reference point, and mid-way is as good as any!

Some diagrams will measure between the low threshold and high threshold...
