Separating analogue & digital grounds is just one of the techniques that can be used to minimise the noise in the analogue section.
It should be obvious that there's no point in having a high-precision sensor and ADC if your analogue circuitry is too noisy! Whether it's necessary or not in your particular application depends on the details of your system - your accuracy requirements, signal levels, etc, etc... |
