The 8051 itself does not have any "modes".
However, some of the peripherals can be set to different modes. Particularly, both the timer and the UART does have "modes".

You can find the details in the corresponding chapters in the "bible" (link to "bible" see http://www.8052.com/faqs.phtml?FAQ=120112 ) and the Tutorial (see on the left).
