I think the OP is heavily misunderstood. He (she) is not asking about "multi-threading" but only wants to know how to handle two sensors at one micro, because he (she) is forced to solve this problem. He (she) could also have asked about "multi-tasking"...
So, he (she) has urgently to read the bible chapters about external interrupts and timer/counters but need not to think about dual core systems.

Maybe this appeared to me too obvious...
