Yes you are right. I somehow always had CRC32 in mind which is overkill for a 8051. But the CRC8 really seems like an option than.
For my current project the simple summing checksum will do. Maybe I have to discuss with my professor if a more elaborated checksumming scheme is better.

The XOR scheme you have described seems simple and easy to implement as well. Actually a sort of combination of my original idea.
