We have an 8051 data acquisition development system that uses an Atmel 89S8252 interfaced to a 11 channel 12-bit ADC (TLC2543) / or an 8-bit (TLC542 ) device. Write to us to get a reference design. We sell the development system but can share the design. The code and the schematics are also explained in the textbook that accompanies the kit.
