Yes, the 8051 does seem to be the "Core of Choice" for all these types of application.
This is probably because it is so widely available as IP cores - which cannot be said of the proprietary architectures like PIC, AVR, HC08 (only very recently), etc.

And production-quality independent tools are widely available, and there's a huge base of code & experience...


For applications where the 8051 doesn't cut it, ARM is the "Core of Choice" - probably for similar reasons.
