Your normal variables will not hold their values if you loose the power.

But if you have a chip with EEPROM memory, then you can write any important variables to this memory and then read it back after reboot. Some processors may also write data to to parts of the program memory space (normally flash).

There is also the possibility of using an external RAM memory with a battery backup, or any processor that supports running a real-time clock and parts of the normal memory from battery when the rest of the processor is without power.
