You might try using CORDIC for your DSP trig calculations: CO-ordinate Rotation DIgital Computer. I think it can be easily implemented on 8051 as it can be done completely using shifts and adds. It is discussed in detail on - http://dspguru.com/info/faqs/cordic.htm I am not sure if it is the best way to go about a fft tho'. It just seems to me to be a good thing to try out.
