Look at the descriptions of the external memory accesses in Chapter 3 of the so-called "bible" for the 8051; including the timing diagrams - what do you think might happen at the points where it samples the external lines if no memory is physically present...?

Also check the Datasheet for your particular device to see if there are any specific variations...
