The ULN2003 IC is far from being a device suitable for 3A and 5A stepper motors!! I suggest that you look around to see if you can find yourself some half-bridge type drivers that can handle the currents that you require. You may very well end up with some type of controller chip that supports external half bridges that you build up from discrete power MOSFETs.
