There are plenty of bluetooth devices available that have a UART interface and use AT commands - so it's pretty much the same as interfacing a standard modem...

An advantage of using a device with a UART interface and AT commands is, of course, that you can experiment "manually" using a terminal (emulator); eg, the Windoze Hypoterminal.
