I have done this using an 8051 (actually, 80C320) and a Rockwell (Conexant) Socketmodem. It is really straightforward, once you have read the 70 page data sheet...

The product had to talk to a number of other 80C320 controls in addition to the modem, so we chose the 80C320 because of the dual UART.
