Yes you can do it. I think we keep coming back to the issue of what platform is most appropriate.

If this is a "one of" use an embedded PC board it will just be faster, easier. If this is a product perhaps you can amortize the effort required to implement a non-pc platform across you expected unit sales.

The most appropriate "micro" might just be a DSP like the Analog Devices "shark". Do you have a price point?
