I found what I had to do: put some delay (approx 25ns) to the E pin of the LCD (PIN 6). I had the LCD XDATA mapped on a certain memory location using 8bit RD /WR cycles to control the LCD, so NOPs were useless.

I'm not sure if the data sheet tells a difference, but the application showed it clearly.
