What that means is, don't change the state too soon after reset. You can hold PSEN low, and EA high, as long as you want.

will it be sufficient to put PSEN low by a jumper and then doing a HW reset to reach the bootloader on a blank device ?
(EA is already high and ALE not connected in my app)

BTW: my datasheet has 113 pages (from the ATMEL hompage) dokument no 4105C-8051-02/02
