The servos generate noise trough the power supply wiring. The problem stopped when I used an extra power supply to the mouse encoder...

I wasn't thinking that the problem was with the power supply since I'm using small switched power supplies (from old philips cell phones) and, for the servos I had added 2 470uF capacitors for extra filtering...
