In my opinion 16 bit controllers should be considered for applications requiring:

(1) massive computations with limited time till results needed.

(2) very high speed real time i/o handling requirements.

(3) need to run embedded OS for legacy support or high protocol requiremets to higher level computing nodes.

If your application is not cutting edge technology, an 8 bit will probably be capable.
