If you do a search here on code banking you'll find a lot of stuff. If you're using the Keil or IAR compiler their manuals cover it well. If you don't have the Keil demo CD, get it for the documentation it includes even if you eventually want a different compiler.

I use the IAR compiler myself, and the compiler handles most of the hard stuff, basically you tell it what pins you want to use for bank selection.
