Not only would you have to convert it from hex to ascii, you might even have to perform some scaling/shifting operations as per the calibration.

If you are using the LCD as a debug device, you might keep it in hex, and decipher the symbols.. but if you expect customers to use the display for their purposes, you must accurately show them the data they require.
