You need to read the uVision Getting Started Guide, and work through the examples in it.

A Target is the thing that you actually build - it defines all the input files required, and the output file, format, etc

A Group is simply a way of grouping a number of files together; eg, so that you can easily set common options for all the files in the Group, or just to organsise your Project.
