Heres the choice list for 8051/52 chips with onboard USB in packages that lend themselves to socketing on 0.1 inch centers.

Atmel AT8xC5122 - PLCC-52
Infineon C540U & C541U - PLCC-44
Myson MTV212M - DIP-40 & PLCC-44

All other types from Cypress, TI, Cygnal, Atmel, Infineon etc are in QFP/TQFP/PQFP/LQF/MQ type surface mount packages that are not readily socketable and you must either make a circuit board, utilize an evaluation board or acquire the chip on an application header.
