If you only need an ADC for experimenting, who cares if it is obsolete? Besides, modern designs are getting harder and harder to find in DIP packages.

A fairly common family of ADC's in DIP packages are National Semiconductor's line of ADC08XX chips including the ADC0801 - ADC0805, ADC0808, ADC0816, etc. I have no idea where you could obtain something like that in China, though.
