Hi Paul,
Mahmood suggestion of a mechanical solution would be best. I think you will solve your EEPROM endurance problem and be left with another bigger problem which is reliability. To trust something that can be wipe out even with the best of efforts to prevent it is foolish. The older mechanical timers don't suffer from this problem.
