OK, here are the values from the 1st line of your table, shown in your original Hex, plus the corresponding Binary and Decimal representations, and ASCII characters (where applicable):

Note that ASCII only covers the values 0-127 (7 bits), and 0-31 are non-printing control characters.
Various applications have their own proprietary definitions for character codes 128-255; eg, here's the IBM-PC set: http://www.8052.com/users/awneil/charset.gif

Note that the Windows calculator can do Hex!
