PT100 is a PRT (platinum resistance thermometer) - you measure its resistance. Typically you do that by driving the device with a small, constant current source and measuring the resulting voltage across the device.
Decent PRTs for real precision apps ( we routinely measure to a precision of 0.05 deg C at 150 C) are 4 terminal devices, and are used with Kelvin connections. Steve |
