Rather than 3 components (sensor, amp, ADC), how about a direct-to-digital sensor?

A Dallas DS1820 "1-Wire" sensor requires minimal extra hardware to connect to a single MCU port pin.

Although we don't actually control temperature with them, we use them to monitor temperature inside fridges, freezers, and chilled vending machines
