When you work with stuff like this you need to understand the operation of the device you are trying to communicate with. Google for a HD44780 data sheet on the WEB and read through it. You will then know all about why waits are needed and where there need to be used.

There is also a tutorial on this web site that gives all kinds of detailed information about writing an LCD driver.
