If you exceed the datasheet limits, the behaviour is UNDEFINED

That means that absolutely anything could happen - it need't be sensible, it needn't be reliable, it needn't be predictable, it needn't be repeatable!

There is absolutely no way at all to tell what might happen.

The only certainty here is that nothing is certain.
