For the time being forget complex circuitry.

First you need to do a simple time budgetting :

Work out the fastest write time to update all pixels in the display (from the data sheet.)- I am not sure if the data sheet calls it a frame-update rate - just check. Compare this with the minimum period of the curve that you want to plot. Then you know what is the maximum frequency that you can plot.
