Just because you're a student it doesn't excuse you from following the normal rules of the forum - like using a descriptive subject for your post!

In fact, having told us that this is a student assignment, you now need to convince us that you are actually putting in some effort of your own, and not just waiting to have your homework done for you!

If the data is letters and not numbers

What do you mean by that?
As far as an 8051 is concerned, the whole world is just numbers - it knows nothing about letters or anything else!

how would I go about starting the code?

As a student, of course, you should start by reviewing your course notes and previous assignments; ensuring you're up-to-date with any set reading, etc, etc,...

In general, you need to look at the problem and think:

1. What are the initial conditions?
How does it all start?

2. What is the process of doing each successive step in the problem?

3. What are the termination conditions?
How do you know when you've finished?

You may find that a flowchart helps, or some other sort of diagram; or maybe pseudo-code.
A decent programming course should have introduced you to these concepts before going anywhere near the details of assembler...

So far I have been looking at:
DB "TEST", 0

Fine - where do you think that gets you?
