For an American citizen, getting in to Europe requires a Visa waiver, like the one we get when we enter the USA, Its a simple form that takes about five minutes to fill in. Is your wife a Mexican national though ? That might take a visa. Check with the Embassy in MXC.

Getting around is easiest by Car in the UK, then you can move around fairly inexpensively in the rest of Europe by rail, thought there is a direct flight from London Gatwick to Maastricht.
