That I am afraid is your problem. I'd start off Philips site, or I'd wait and see if one of your local experts like Prahlad can be persuaded to offer his comments. Ask him nicely.

Is this a new product or a toy for you ? If its a toy, stick to 555 timers. If its not, then the 2 USD they cost in modest volumes is not really an issue.

Yes.
Another method is to use the pots to set time constants of little RC networks that you kick with the o/p of an I/O pin and wait for them to rise high enough to set a logic one on a pin. BEST is to use a comparator (Quad LM311 or somesuch, or cheap single supply op-amps for power saving) That gets you no ADC requirement, and an instictive HMI without any fancy digital I/O
