I would like to add, that some ESD-protection and filtering should be added, where the cables hits the analog front-end electronics. Simply two 100nF/50V X7R (0805) from both signal carrying terminals to ground will do the job. One could also use two PI filters, means the combination of each two cermic capacitors with a ferrite bead joining them.
