The marketing sounds nice, but I don't see us engineers dropping everything else and jumping on the PSOC bandwagon. Sure it's got some nice features and the app builder style of thing makes things a little easier. You could say the Visual Basic makes everyone a Windows programmer but reality has shown things to be a little different - same thing here.

As for these 'soft' micros implemented in fpgas - the concept is wonderfully nice and has been with us for some time. Altera pushed the concept further with the app builder style of interface - press some buttons and your favourite cookies are fresh from the oven! Now everyone does it. Great for selling fpgas (as that is their business) but the downside is that it chews up a lot of silicon and they're not exactly light on the power consumption. The Triscend concept of a cpu and a fpga sounds good to me as Altera and Xilinx have devices with multiple cpus and fpga. At the high end, they're not fiddling with soft cpus obviously.

I dare say your real cpu vs soft cpu at this time would be (a) cheaper and (b)draw significantly less power.
Like most things this will most likely change over time - just like programming embedded systems purely in assembler. Years ago it was unreasonable to use 'C' now the economics have changed some one might say it is unreasonable to use assembler.

Like most things, its a matter of evaluating the various options and choosing the one that works for you.
