Because the adc in the analog devices part is sigmadelta converter, it takes a few conversion cycles to aquire the new value when you change channels. This is a design feature that they dont exactly tell you as you`re supposed to know this. In my application I scan 4 loadcells, I wait 3 cycles after each multiplexer change before using the value as read. This may explain what you are seeing. Such is life with averaging type a to d conversion! This is not limited to these AD parts either.
