.... you are screwed if you do not get a datasheet with it.
Much salvage is 'proprietary' parts. For instance, when I did scales (680.000 made) we used a proprietary display and there was only 2 copies of that datasheet both marked CONFIDENTIAL in large red letters. If you plan on disassembling some old unit to use the display, it is not worth the effort till you have verified that a datasheet is available for the part you want to salvage.
