To demod you want a bandpass filter centered on the carrier frequency. To do this as well as the 3pin jobbies you mention you probably need to do a bit of DSP that will probably push the limits of the lpc925. Unfortunately, interference and reflections are your biggest enemies - thats why you need the filtering. You could try using a NE567 tone decoder ic, but that's extra hardware. By the same token - what are you using to receive the IR?
