A not so common project would be to get a version of OpenOCD to work with JTAG capable 8051s (I'm thinking of some SiLabs variants here, but must be some others around with a JTAG). The ideal setup would be hardware with a USB interface to host, and SPI bus to JTAG pins for fast data transfers. There are open source starting points for the source code using other processors.
