In 8051 the interruption is detected for flank ascendent or descendent.
INCORRECT only falling edges create interrupts
In encoder signal A and B it is in different phase, so that if the interruption is detected by flank I lose information because no detect when A and B changes from 0 to 1 or from 1 to 0.
I thought that old goose (A = clock, b = dir) was cooked. The simple, universl, proven method is to use an (Agilent) Quadrature decoder. It is possible to do it in the micro, but many factors makes it darn difficult.
