There are '51 derivatives which do have split FLASH, i.e. your application can run from one part of the FLASH while programming other part of FLASH (the P89V51RD2 is one of them, and is very similar to the AT89C51ED2).
You can also consider external memories, such as the Ramtron's FRAM, which are nonvolatile memories with no need for battery and very fast write. Then there is the Ramtron Versa is a '51 with built-in FRAM, but that's quite a leap from the 'ED2. Also, IIRC, it takes the same 10ms to program a whole 128 bytes page, wouldn't that save your day?
