Hi all,
First of all thank you for all your various interventions/answers, it is always interesting to read somebody else advice/experience. Now shame on me! I had simply forgotten to reference (to ground or Vcc) the unused entries of the 74HCT165 and letting them unconnected was enough to get the strange behavior that I was fighting against.
