I have built a system to grab up to about 100,000 8-bit samples per second, using a 8051 with 32 kb external RAM and a flash 8-bit ADC converter. The samples are sent to a PC and displayed in the screen.
The most expensive part of your project will be probably the graphic (LCD?) screen.
