I think, its easier to use an 8051 derivate with bigger Flash available, e.g. the Atmel T89C51RD2 with 64kB Flash inside.
Additional this device support download of a new program via RS-232 inside your application.

If the project was finished, then you can check the real size and select the fitting 8052 derivate.
