You need to condition your signal rather more than you have, with an amplifier, a window comparator and a schmitt trigger at least. What kind of signal changes have you seen on your oscilloscope when you try it ? Does the output change if you put a black object in the way ? Clear materials often need better detection schemes than the simple optical beam break. A very good method is the self heated thermistor.
